This is my second grill from AZ BBQ Outfitters. I won a Scottsdale and a Boothill. First off the Scottsdale is a great grill. You can use it as a BBQ Smoker but it grills best. It’s not a sealed unit even with the lid closed. So for big Grilling and parties the Scottsdale is great. Howerver I wanted a new stick burner so Dave told me about the Boothill.

The Boothill has got to be the best BBQ, Smoker, Grill, Pellet Grill, Oven and Santa Maria Style Grill in production. This sucker is heavy, thick Steel (3/16 steel Plate PO meaning no mil scale) There is absolutely no leaks, seals up air tight. The smoke stack mounts to a separate chamber on the back of the grill so it causes no interference. The baffle plate has a drawer built in. When grilling it can be used as an ash catch or when smoking I use it as a water pan. It sits in line with the opening from the firebox, which is perfect for balancing out temps. The Boothill I have is the 48 x 24. Out of 4 feet I only have a 10 degree difference at grate level from left to right when smoking. By adjusting the vents on the baffle plate I am sure I can get it closer.

Because this unit is so big I thought I’d have to load it up with wood to hit 225 well I was wrong I was at 350 in no time. The moveable baffle was helpful in fine tuning the temps while smoking. When using it as a smoker it acted neither as a traditional flow or as a reverse flow smoker. It is more a hybrid which makes it extremely easy for anyone, even a first timer to use. Temps can be controlled via the smoke stack or firebox. I use the vents in the firebox for major adjustments and smoke stack for fine tuning.

I had AZ BBQ outfitters cut a hole in the side opposite the firebox to allow a pellet hopper to be installed. It works great. The highest temp it will go is 325 F but I wanted this options for long cooks. I plan on doing so brisket by starting out with a real wood fire for about 4 - 6 hours and turning on the pellet hopper to finish the cook while I get some sleep.

As a grill it is great. Being able to move the charcoal / fire grate up and down is awesome. It allows for use as a Santa Maria Style Grill or traditional charcoal grill.

The grease management system is an excellent idea. It stops a lot of flare ups and bad flavors. It works great to catch the fat ad juices from your low and slow cooks. I make some killer mop sauces with it. I put some herbs and citrus in the grease trap and let the fat slowly infuse itself as it travels to catch can.

My only concern with the grill were that the charcoal was to far from the cooking surface for a really high heat sear and the smoker brassero in the firebox would really limit the amount of wood that can be used and finally the air intake was not low enough. My concerns for the firebox was quickly no longer a concern after my first rack of ribs. After warming up the smoker I never had to load more than one log at a time. To remedy the charcoal grate I extended the legs a bit to get it closer to the cooking surface to do some pittsburg steaks. This isn’t necessary at all and is a great grill from the factory but I always have to modify my grills.

All in all both grills are awesome. Having dealt with Dave Sandra and Chris on both grills I see no need to shop elsewhere for a grill. My favorite out of the two is the Boothill.

I can’t thank you enough for the Scottsdale cooker.  This has exceeded every expectation and desire that I was looking for in the cooker.
 
From ordering, to my customization requests, to the packing job you guys did, to the follow up and customer care… everything has been outstanding.  The grill arrived packed extremely well on a pallet and with a new moving blanket to protect the grill in transit.  No moving parts and very solidly attached to the pallet. 
 
The grill is heavy.  I’m glad you convinced me into getting the counter balance.  Of course, heavy is a good thing when you’re talking about a wood burning grill, so I was thrilled at how solid everything was.  The lines on the grill were precision cut.  No sharp corners, and everything moved as it should.  The design work you guys pulled off on the logos were great as well.  The metalwork is just amazing.
 
The cooker can do it all.  The Argentine grates do such an amazing job keeping the grease off the fire that I’m able to get a wonderful bark and crust on meats.  I’ve been running it with wood logs and the cooker has held up to some serious heat.  The brasero attachment is wonderful too for longer cooks.  It’s nice to be able to have a constant flow of burning embers without dealing with the smoke of freshly burning wood.  One of my fears of running a wood cooker was the fire hazard.  This cooker is so thick it keeps everything well under control.  The lid is heavy and keeps things well under control as needed. 
 
I got a griddle attachment as well for the grill, so I’m able to run a flat top and a grill at the same time.  The 48” grill has ample space for all kinds of cooking.  I’m just scratching the surface of the possibilities.  It’s like an entire kitchen worth of appliances in a single cooker, but all over wood fire.  Indirect set ups are a breeze with all this space.  You’re really only limited by your imagination with this cooker. 
 
Ash removal is a breeze, and the removable grease tray keeps the icky stuff in one manageable place.  Lots of thought went into this grill, and it shows.
 
This is a great product and you guys run a great company.  I’m looking forward to many years of cooking with this grill.

Great job guy's. The entire shop has marveled at it. Very impressed with entire package. Great packing job also. Blanket is a nice touch. You know its like golf clubs. You can have the best in the world but you can't buy a swing. I feel sure that I have one of the best BBQ grills built. I just hope I can do justice cooking on such a fine piece of BBQ Craftsmanship.

Good Morning.  Need your help (again).

I've used the Tuscan Grill at least once every day since receiving it and like it a lot.  And now that I have a few cooks on it I see the Scottsdale would probably have been a better, more versatile choice for me and how I cook.   

Tell everyone there I am a real fan of their work.  The cookers you guys make are outstanding pieces of equipment, beautifully built, and have been a big hit at the parties and catering events I've done.  The Tuscan is a better grill than I am a cook... and I'm a pretty good cook!
